This lesson delves into the practical, step-by-step process of establishing your own snail farm—whether as a small-scale backyard operation or a commercial enterprise primed for the expanding global market.

The global edible snail market is valued at approximately $2.6 billion and is experiencing steady growth, driven by increasing consumer demand for exotic, nutrient-dense, and sustainable protein sources . Countries like France, Spain, Italy, and Nigeria are dominant players, with new markets emerging across North America and Asia . This presents a significant opportunity for new entrants. However, success in heliciculture—the scientific term for snail farming—requires meticulous planning and adherence to proven practices .

This guide provides a detailed, actionable framework for setting up your snail farm, from initial site selection through to establishing a system for ongoing management.


Step 1: Feasibility, Research, and Planning

Before acquiring land or snails, a robust planning phase is essential. This is not a venture to enter into blindly.

Market Research and Business Planning:

  • Identify Your Target Market: Determine your primary sales channel. Will you sell live snails to wholesalers, purged snails to restaurants, or processed products directly to consumers? Understanding the demand in your region is crucial .
  • Develop a Financial Model: Create a detailed financial forecast. This should include startup costs (land, construction, breeding stock, equipment), operating expenses (feeding, labor, utilities), and projected revenue based on production volume and market prices . Many new farmers underestimate the initial investment and the timeline to profitability.   2. Semi-Intensive System: This combines a controlled environment for breeding and hatching (e.g., in hutch boxes) with outdoor pens for fattening. This provides greater control over the vulnerable early stages .

This is the most expensive setup but allows for year-round production and maximum protection from weather and pests. Constructing the Snailery (Based on the Semi-Intensive Model):

  1. Perimeter Fence: Erect a robust fence around the entire farm to deter larger predators (e.g., rodents, birds) and prevent snail escape. Use materials like galvanized sheets or fine mesh that are dug at least 20 cm into the ground .
  2. Internal Pens (Hutch Boxes for Breeding): Construct hutch boxes. These are wooden boxes on stilts, approximately 60 cm x 60 cm, filled with 18-25 cm of sieved, good-quality soil (see Figure 1). This system is highly recommended for breeding and hatching because eggs and young snails are easily monitored and protected from predators .

Step 4: Soil Preparation and Planting

Step 6: Management and Ongoing Maintenance
